A vendor outside the still being repaired Palao market in Iligan City sells most of the ingredients for the “tabirak” (also known as “binignit” in other Cebuano-speaking areas and comparable to the “ginataan” of the Tagalogs) early morning Wednesday. The tabirak is traditionally served during the Holy Week.
